Sebastien Bobinet is a young winemaker with two hectares of old vines Cabernet Franc located in Saumur-Champigny and a scattering of younger vines located throughout the Coteaux of Saumur. Sebastien is an organic winemaker who plows his vines with a horse, having studied with Olivier Cousin, and makes a very limited amount of outstanding Saumur-Champigny every year.

Soil: Black loam infused with broad veins of limestone.
Varietals: 100% Cabernet Franc.
Vinification Method: Grapes are harvested by hand and all the bunches are destemmed before maceration in tank which lasts for six weeks. The wine rests in 300 liter barrels located in a natural limestone cave for 18 months before the wine is bottled without fining or filtration.
Tasting Note: Garnet in the glass with scents of ripe plum, red cherry and red apple core infused with notes of limestone and a suggestion of oak. This is a rustic and earthy Cabernet Franc with hints of apple zest and deep, dark cherry flavor backed by dynamic minerality. The tannins are supple, always present but never intrusive, and the mineral complexity in the finish is superb.
Pairing: Serve with braised rabbit, stewed chicken dishes and pan seared duck breast.
