Guillaume Noire left a career in branding and advertising in Paris upon the birth of his daughter to begin making natural wine in Anjou in the Loire Valley. He and his wife were interested in environmental conservation and had been fans of organic food. Upon the birth of their daughter, they decided it was time to really participate in these movements, and raise their daughter in the countryside. He kept a few of his best advertising clients and they packed up their lives and relocated to Anjou. Guillaume received a great deal of help from other winemakers, including Christine, Joel and Jeremy Ménard of Domaine des Sablonnettes. The vineyards are in Rablay-sur-Layon in Anjou, but Guillaume has decided, like many of our producers, to eschew working in the appellation system, thus all the bottles are classified as Vin de France and can not display Rablay-sur-Layon on the bottle.

Vinification Method: Grapes are hand harvested and fermented as whole bunches for about 5-6 weeks in fiberglass tanks. The bunches are pressed and then mature in the same fiberglass tank for 6 more months before being bottled unfined, unfiltered, and with zero sulfur added.
